CIDERMAKING
Ice cider is made using cryoconcentration, a process that involves freezing the must during winter to extract a syrup rich in sugar and flavors. This nectar is then fermented at low temperatures for six to eight months to create this exceptional ice cider.
RESULT (10% alc./vol.)
The result is an ice cider with a rich golden color and subtle, complex aromas of apricot, caramel, dates, and banana. It is smooth on the palate, with a pleasant acidity that perfectly balances its concentrated flavors, enhanced by hints of crème brûlée and dried apricot. It offers great length and a refined finish.
SERVICE
Serve chilled between 8°C and 10°C.
It pairs beautifully with foie gras mousse, aged firm cheeses like Alfred le Fermier, dried fruit desserts, and apple tarte Tatin.
