200 g skinless salmon
4 tbsp Punzu sauce
1 tsp Dijon mustard
1 tsp chopped French shallots
1 tsp chopped chives
1 tsp fresh coriander
1 tsp Sriracha
1 tsp ginger syrup Les Charlatans
1 tsp tea Thés CG
lemon juice
French baguette

Cut some bread croutons and put in the oven until crisp and let cool.

In a bowl, mix all the ingredients. Add salt and pepper to taste.

Serve the tartare on the cooled croutons.
