Red Beet and Apple Salad with Feta and Pine Nut - Recipe - Du Minot

Ingredients

 400 g cooked red beets
 1 French shallot, finely chopped
 2 apples
 15 ml chives or green onions
 15 ml cider La Bolée Du Minot
 30 ml pine nuts
 15 ml lemon juice
 100 g feta cheese, crumbled (optional)
 45 ml olive oil
 15 ml apple cider vinegar
 salt and Pepper

Preparation

Dice the beets into pieces of about 1 centimeter.

Peel and cut the apples into smaller pieces and sprinkle with lemon juice so they do not turn brown.

Fry the pine nuts with a touch of butter or vegetable oil until lightly browned and drain on paper towels.

Put the beets with the apples in a bowl and add the olive oil, cider, vinegar, shallot and chives. Mix well to coat with the vinaigrette. Add salt and pepper as desired.

Serve the salad on plates and crumble the feta over it and add the pine nuts. Can also be served with thinly chopped kale leaves.
