Pork Dumpling With Ice Cider Peanut Sauce - Recipe - Du Minot

Ingredients

For stuffing
 ½ lb lean ground pork
 1 apple diced
 1 green onion, very finely chopped
 1 tbsp fresh ginger chopped
 1 gousse d'ail, hachée
 1 tsp sambal oelek
 1 tbsp soy sauce
 1 tsp roasted sesame oil
 2 tbsp Du Minot Des Glaces
 1 package of dumpling dough (called dumpling wrappers)
For the sauce
 ¾ cup chicken broth
 ½ cup crunchy peanut butter
 2 tbsp Des Glaces ice cider
 1 tbsp soy sauce
 1 tsp grilled sesame oil
 1 tsp sambal oelek
 salt and pepper

Preparation

In a big bowl, put all the ingredients for the stuffing and mix well.

To assemble the dumplings, place a dumpling dough in the palm of your hand or on your counter and put about (1 tbsp) of stuffing in the center.

Moisten the edges with a little water using a brush or your finger then close the dumplings by folding the dough on itself like a half-moon and pinch the edges well to form like a ridge.

In a large pot of boiling salted water, cook a few dumplings at a time in the simmering water until al dente (2 to 3 minutes). Drain and reserve on a deep plate.

For the peanut sauce, put all ingredients in a small saucepan and heat over medium heat for about 5 minutes while stirring with a whisk. Pour sauce on dumplings and serve. You can add some sesame seeds and green onions over it.
