Cut the fish into cubes about 1 centimetre. Reserve in a bowl. Add a few pinches of salt and mix.
Chop the red onion (as thin as possible) and rinse under cold water for a few minutes. Dry in a clean cloth.
Chop the coriander. Cut the pepper into very small pieces. Cut the apples into thin strips. Squeeze the limes and pour the juice over the fish. Add the remaining ingredients and mix again.
Let the fish "cook" for two minutes. Serve immediately. You can also serve it with small pieces of cooked sweet potato and some grilled sweet corn.
