Boil water in a pan with salt and cook the cod about 5minutes according to the size of the pieces.
Stop heating and let it cool. Drain the cod then crumble it.
In a frying pan, lightly brown the onion ant the garlic in oil. Let cool a few minutes.
Mix the flour, baking powder, cider and egg yolks.
Add the cod, the browned onions, garlic and chive.
Beat the egg whites to form stiff peaks. Incorporate delicately to the batter.
Let the batter rest in the fridge for about 1 hour.
Heat the oil in a deep fryer.
Shape small balls with a tablespoon and fry for about 2 or 3 minutes each.
Once golden, drain the acrasand put on kitchen paper.
Let it cool a few minutes before eating.
The acras can be served with different sauces: aïoli, tartare, mayonnaise, etc.
