Ingredients

 6 mint leaves
 ¾ oz Cocoa & Beets syrup (Les Charlatans)
 ½ oz fresh lime juice
 1 oz dark rum
 2 oz Minot’s Crémant de Pomme cider

Preparation

Combine all the ingredients in a shaker.

Lightly squeeze the mint with a muddler or spoon.

Fill with ice. Stir vigorously. Strain the contents through a sieve, pouring the contents directly into a glass filled with ice.

Then fill the glass with Crémant de pomme. Garnish with a small sprig of mint.
