Cidrification
The apples are handpicked, crushed, and then pressed. The fermentation happens at low temperature. Aged on its lees, it is then filtered and bottled at low temperature to keep just enough CO2 and all its freshness.
Tasting Notes
A still, dry cider with delicate aromas of apple, peach and honeydew melon. Its round mouth offers peach flavors, a little bit of CO2 and a fresh finish.
Pairs well with white meat, sushi, mussels, salmon tartar and Mediterranean skewers. In the kitchen, La Bolée is a very good substitute for white wine.
