<h4>Cider Making</h4>
<p>An aperitif cider made from a blend of apple juice and cider brandy, similar to pommeau from Brittany or Normandy, aged in oak barrels for two years.</p>
<h4>Tasting Notes</h4>
<p>A sweet aperitif cider with a beautiful golden color and copper highlights, featuring aromas of ripe apple, vanilla, spice, smoke, and cider brandy. On the palate, it is smooth and full-bodied. The finish reveals woody and vanilla notes.</p>
<p>Serve chilled between 6°C and 8°C as an aperitif, or at room temperature between 16°C and 18°C. Excellent with foie gras, aged and strong cheeses, and dark chocolate.</p>

McIntosh, Lobo, Cortland.</p>
<p><strong>CIDERMAKING</strong><br />
The apples are hand-picked and pressed in a single batch. Fermentation takes place at a low temperature. It is aged on its lees, then filtered and bottled cold to retain sufficient CO2 and freshness.</p>
<p><strong>RESULT (7% alc./vol.)</strong><br />
A still, dry cider with delicate aromas of apple, peach, and honeydew melon. Its round palate offers peach flavors, a slight hint of CO2, and a refreshingly crisp finish.</p>
<p><strong>SERVICE</strong><br />
Serve chilled between 8°C and 10°C.<br />
Pairs wonderfully with white meats, sushi, mussels, salmon tartare, and Mediterranean skewers. In cooking, La Bolée serves as an excellent substitute for white wine.</p>
